Greek Dinner!
Time flies - it's already been a year since we went on our vacation to Greece. We made unforgettable memories on that trip, but one of my favorite impacts of any vacation is how the experiences and memories influence our lives at random times. Our Greece-inspired dinner tonight made us happily reflect on that vacation and how we could still bring back those memories with each bite. The green beans reminded us of our first night in Papingo, where we were pleasantly surprised by this rustic dish at a restaurant with incredible panoramic views of the Vikos Gorge.
The ubiquitous Greek salad was eaten throughout our trip, but the mixture of fresh vegetables, peppery oregano, and briny feta was always the perfect summery accompaniment to our meals. We've eaten it so many times in the past year that it's become a staple side dish. This meal included a unique version with pickled onions and fried feta that I have yet to be able to recreate:
Lamb was made a regular appearance on the Greek menu. In the States it's priced much more expensively than other meats, but we often found it to be priced similarly to other entrees. This meal in particular had a memorable version called kleftiko that was slow cooked in parchment paper. Plus the view.
